We’ve been in a bit of a soup rut lately. A nice rut full of lentils and leek and chickpea soup but it suddenly it felt like time for a change. My partner reminded me about chowder which I haven’t made for probably a few years. This is adapted from one of his old cookery books, 

It isn’t as virtuous as lots as vegetable soups since it’s 

Easy Vegetable Chowder

  1. 1 tbsp vegetable oil
  2. 1 red onion
  3. 1 red pepper
  4. About 250g potato, peeled
  5. 2-3 cloves garlic
  6. 3/4 pt vegetable stock
  7. 1/2 pt milk
  8. 150g frozen sweetcorn
  9. 50g strong cheddar cheese, grated
  10. Black pepper
