Easy vegetable chowder

We’ve been in a bit of a soup rut lately. A nice rut full of lentils and leek and chickpea soup but it suddenly it felt like time for a change. My partner reminded me about chowder which I haven’t made for probably a few years. This is adapted from one of his old cookery books, 

It isn’t as virtuous as lots as vegetable soups since it’s 

Easy Vegetable Chowder

Servings 2


  • 1 tbsp vegetable oil
  • 1 red onion
  • 1 red pepper
  • About 250g potato peeled
  • 2-3 cloves garlic
  • 3/4 pt vegetable stock
  • 1/2 pt milk
  • 150 g frozen sweetcorn
  • 50 g strong cheddar cheese grated
  • Black pepper
A note about salt

You might have noticed that I rarely mention salt in my recipes. I just don’t use it a lot. I’m sure a lot of people would think my cooking is ‘under seasoned’ but I have to watch my blood pressure and I’m used to not using much. There are some things, like rice, where I add a bit at the table but I rarely add it into my cooking.
