Green Minestrone
Ingredients
Olive oil
1
onion
chopped
2
cloves
of garlic
finely chopped
1
leek
trimmed, halved lengthways and sliced
1
fennel bulb
trimmed and finely sliced
1
litre vegetable stock
1
courgette
diced
50
g
peas
50 - 100
g
spaghetti
optional
1/2
tsp
dried basil
1/2
tsp
dried mint
Juice of 1 lemon
Black pepper
Instructions
Heat the olive oil in a large pan and fry the onion and garlic gently for a few minutes.
Add the leeks and fennel and cook for a further 5 minutes.
Add the stock and dried basil and mint and bring to the boil.
Break the spaghetti (if using) into short pieces and add.
Simmer for about 10 minutes.
Add the courgette and peas and simmer for a further 3 minutes.
Add the lemon juice and black pepper to taste.
