Green Minestrone

Ingredients

  • Olive oil
  • 1 onion chopped
  • 2 cloves of garlic finely chopped
  • 1 leek trimmed, halved lengthways and sliced
  • 1 fennel bulb trimmed and finely sliced
  • 1 litre vegetable stock
  • 1 courgette diced
  • 50 g peas
  • 50 - 100 g spaghetti optional
  • 1/2 tsp dried basil
  • 1/2 tsp dried mint
  • Juice of 1 lemon
  • Black pepper

Instructions

  • Heat the olive oil in a large pan and fry the onion and garlic gently for a few minutes.
  • Add the leeks and fennel and cook for a further 5 minutes.
  • Add the stock and dried basil and mint and bring to the boil.
  • Break the spaghetti (if using) into short pieces and add.
  • Simmer for about 10 minutes.
  • Add the courgette and peas and simmer for a further 3 minutes.
  • Add the lemon juice and black pepper to taste.
